Preheat oven until it reaches 375 degrees Fahrenheit. Cook cauliflower florets in hot salted water until they become tender but firm.

In a saucepan, melt 2 butter tablespoons and add flour while stirring constantly for 2 minutes.

Add hot milk to your mixture of flour and butter. Stir until it mixes well. Let the mixture boil as you whisk constantly for 1 minute until. The mixture should thicken.

Remove from heat and add 1 teaspoon of nutmeg, salt, pepper, Gruyere, and Parmesan.

Pour one third of sauce in an 8 by 11 by 2 inch dish. Place your cauliflower on top and spread the sauce uniformly on top.

Sprinkle ¼ cup of Gruyere on top of the bread crumbs. Melt the other 2 butter tablespoons and drizzle over the gratin.

Season with pepper and salt. Bake until the top turn’s brown, about 5-6 minutes. Your dish is now ready and can be served while it’s hot or left to cool to room temperature.


  • 2 tablespoons butter
  • 2 medium zucchini (about 7 ounces each), sliced crosswise 1/4 inch thick
  • 2 medium yellow squash (about 7 ounces each), sliced crosswise 1/4 inch thick
  • 2 shallots, minced
  • 2 garlic cloves, minced
  • Coarse salt and ground pepper
  • 1/2 cup heavy cream
  • 1 cup panko
  • 1/2 cup grated Parmesan cheese
